By the time you're back in Port Canaveral, you'll feel properly rested rather than rushed. The route threads through 3 countries along the Caribbean coast: Dominican Republic, U.S. Virgin Islands and St. Kitts & Nevis. Keep an eye out for St. Thomas: US Virgin Islands' duty-free harbour paradise. With about 8 hours at each port, you'll want a plan, or at least a shortlist. There are 14 restaurants on Celebrity Apex, so you'd need to double up a few evenings to try them all in 7 nights. Port Canaveral itself is worth spending some time in. Don't just treat it as a departure point. That's 7 nights well spent.
