Of the stops, Limassol tends to be the one people talk about: Sun, wine, and ancient kingdoms on Cyprus. Roughly 11 hours ashore per stop. No need to rush. There are 8 restaurants on Rhapsody Of The Seas, so you'd need to double up a few evenings to try them all in 7 nights. Piraeus (Athens) itself is worth spending some time in.
