Of the stops, Grand Turk Island tends to be the one people talk about: Where the shelf drops into the deep blue. Roughly 8 hours ashore per stop. No need to rush. There are 15 restaurants on Carnival Sunshine, so you'd need to double up a few evenings to try them all in 8 nights. Norfolk itself is worth spending some time in.
