The route threads through 3 countries along the Caribbean coast: Bahamas, Turks & Caicos Islands and Dominican Republic. Most ports give you about 8 hours, so you can do more than just tick off the main sights. As for the ship itself, There are 15 restaurants on Carnival Sunshine, so you'd need to double up a few evenings to try them all in 8 nights. Hard to ask for much more than that, honestly.
